Profile

Mary Okeudo is a PhD researcher, part of the CDT Moleculecules to Product, School of chemical and Process Engineering. Prior to commencing her doctoral research, she spent the last 3.5 years as a Food Safety and Quality specialist at the Coca-Cola European Partners (CCEP) site in Wakefield, UK.  During this time, she also completed an Master’s degree in Food Quality and Innovation at the University of Leeds. Before this, She gained a bachelors degree in Biochemistry at the Federal University of Technology Owerri, Imo state, Nigeria. During her time there, she spent a total of nine months across two spells at the National Agency for Food and Drug Administration and Control (NAFDAC) zonal laboratory as an intern. 

Research interests

Mary’s research interests are;

  • Protein-polysaccharide fibre interactions in composite materials across multiple length scales
  • Characterisation of biocomposites using atomic force microscopy (AFM), scanning electon microscopy (SEM), transmission electron microscopy (TEM), Confocal Microscopy
  • Method development for the quantifcation of nano-mechanical properties and measurement of interactions of polysaccharide fibres in composite gels
  • Rheological characterisation of biocomposite gels and pastes
  • Impact of freeze-texturisation on the development of structure and texture in biofibre composites using X-ray microtomography and electron microscopy
  • Modelling of protein-polysaccharide fibre interactions in composite gels
